Dense and sweet on the palate: our Blue Label Balsamic Vinegar of Modena IGP is perfect for preparing this trio of baked radicchios. An easy and tasty side dish that will make you fall in love at first bite!
Ingredients for 4 people:
- Blue Label Balsamic Vinegar of Modena IGP
- 1 medium – sized Red Radicchio
- 2 Treviso Radicchio
- 3 small – sized Belgian Radicchio
- 30 gr Raisins
- 40 gr Walnut kernels
- EVO Oil
- Salt
Preparation:
Thoroughly wash the radicchios and divide the red radicchio into 4 wedges, the Treviso radicchio in half and the Belgian radicchio in half.
Prepare an “emulsion”: pour the EVO oil into a small bowl, add a pinch of salt and a trickle of water, then stir energetically with a whisk until you obtain a fairly thick dressing.
Oil the bottom of a baking pan with EVO oil, arrange the radicchios on top and drizzle them evenly with the emulsion you have prepared. Add the raisins, previously soaked, and bake in a static preheated oven at 180° for 40 minutes or until the radicchios are cooked.
Serve and finish with a drizzle of EVO oil, coarsely chopped walnuts, and a final touch of Blue Label Balsamic Vinegar of Modena IGP
