Italian-style poke bowl with the “White Condiment” by “La Vecchia Dispensa”. White, delicate, sweet and sour “White Condiment” is the perfect ingredient to enhance the various flavors of this complex dish. The aromatic woody notes of the “Black Pearl” balsamic vinegar work perfectly well with the delicate ricotta cheese.
Ingredients for 2 portions:
- 200 gr Brown Rice
- 200 gr Peas
- 150 gr Cow’s Milk Ricotta
- 30 gr “Black Pearl” Balsamic Vinegar of Modena
- 1 Vine Tomato
- 1 Avocado
- 1 Red Onion
- 1 Cucumber
- 4 Chard Leaves
- 1 Radish
- 4 Spinach Leaves
- Red Turnip Buds
- White Condiment to taste
Preparation:
Cook the rice into salted water, drain it and let it cool. Leave aside. Boil the peas for 5 minutes, let them cool and leave them aside. Mix the ricotta with salt, oil and balsamic vinegar. Stir the mixture with a whisk until it becomes creamy. Put the mixture into a pastry bag. Now let’s cut the vegetables! We do recommend to cut the tomatoes, cucumber, red onion and radish thinly in order to obtain a better taste. Peel the avocado. Cut it into two. Slice the halves.
Now let’s compose our Italian poke! As usual, we start from the rice basis. Then we add the vegetables, seasoning every layer with the “White Condiment” by “La Vecchia Dispensa”. Then we add the red turnip buds, chard and spinach leaves, finishing with a generous portion of peas and ricotta with the “Black Pearl” balsamic vinegar.
