Have you ever tasted gnocchi with balsamic vinegar?
If you haven’t done it yet, you absolutely must try our recipe of potato gnocchi with gorgonzola, pears, walnuts and Gold Label Balsamic Vinegar of Modena: creamy, fragrant and absolutely irresistible!
Ingredients for 4 people:
- Balsamic Vinegar of Modena IGP Gold Label: to taste
- Red potatoes: 500 gr
- Flour: 150 gr
- Pear: 2
- Walnuts: to taste
- Butter: 50 gr
- Gorgonzola: 150 gr
Method:
Boil the potatoes in their skins in plenty of salted water and, once ready, pass them while they are still hot in a potato masher. Add the flour, add salt and incorporate the mixture, working it briefly with your hands on a surface. Create a loaf, divide it in half, form the gnocchi and place them on a lightly floured baking tray. Prepare the dressing: wash a pear, remove the stem and core and cut it into rather small cubes. Place them into the pan together with the melted butter, soften them over low heat and add the gorgonzola. In the meantime, cook the gnocchi in plenty of boiling salted water and, once they come to the surface, add them to the sauce. Sauté for a few seconds (if necessary add a few tablespoons of cooking water) and serve them on a serving plate. Finish with coarsely chopped walnuts and a nice drizzle of Balsamic Vinegar.
