Quinoa, Peach, Mango and Pecorino Salad with Balsamic Vinegar

Looking for a different summertime salad? Try our quinoa, peach, mango, fresh pecorino and balsamic vinegar salad! The fresh sweet and sour scent of our Organic Balsamic Vinegar of Modena IGP, in fact, makes it perfect for this wonderful salad.

Method:

Wash the quinoa carefully and place it in a pan with the water, mix and cook over medium-low heat for the time indicated on the package. Once cooked, let it cool. Pour the EVO oil and a teaspoon of water into a small bowl, add salt and whisk to create an emulsion. Wash the peaches and peel the mango, cut the fruit into cubes and keep them aside. Now compose the salad with the quinoa, the fruit, the pecorino cheese cut into pieces and season everything with the emulsion of EVO oil and water that you have prepared. Mix everything well and finish with a generous dose of Balsamic Vinegar of Modena.
